The story

Dolma means "filled". Peppers, tomatoes, courgettes and aubergines are hollowed and stuffed with rice, onion, herbs and sometimes minced meat; vine leaves rolled around the same filling are called yaprak sarma.

The olive-oil versions, zeytinyağlı dolma, are served cold with lemon and are a summer staple. Making them together is a family ritual before a big meal.
