The story

Muğla göce tarhanası is made from göce, hard wheat cracked to a medium thickness, with strained yoghurt and tarhana otu, an aromatic yellow-flowered herb that gives it its scent. The wheat is boiled with the herb, cooled, kneaded with the yoghurt and left to ferment for a day.

The dough is then shaped into rings with a hole in the middle, called külür or topan, and dried in the shade until hard, then kept in glass jars or cloth bags. In Muğla it is cooked as a soup with dried chickpeas, dried red pepper and beef or lamb ribs on the bone.

It is a registered geographical indication (mahreç işareti), number 458, registered on 18 September 2019 at the request of the Muğla Chamber of Commerce and Industry.
